Ingredients

4 boneless, skinless chicken breasts

½ cup roasted red peppers, chopped

1 cup fresh spinach, chopped

1 cup shredded mozzarella cheese

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil


Instructions

  • Preheat your oven to 375°F (190°C).

  • In a bowl, mix the roasted red peppers, spinach, mozzarella cheese, garlic powder, paprika, salt, and pepper until well combined.

  • Slice each chicken breast horizontally to create a pocket. Stuff each pocket generously with the filling mixture.

  • Heat olive oil in an oven-safe skillet over medium heat. Once the oil is hot, sear each stuffed chicken breast for about 3-4 minutes per side until golden brown.

  • Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the internal temperature of the chicken reaches 165°F (75°C).

  • Let the chicken rest for 5 minutes before slicing and serving.

Notes

For a tangier flavor, swap mozzarella for feta or goat cheese.

Add fresh herbs like basil or oregano to the stuffing for extra flavor.

Include sun-dried tomatoes in the stuffing for an extra savory kick.
