Description
Sabayon is a classic Italian dessert made with egg yolks, sugar, and fruit juice that creates a velvety custard. Served warm or chilled, it pairs beautifully with fresh fruits or cakes and is an elegant treat for any occasion.
Ingredients
4 egg yolks (room temperature)
1/4 cup granulated sugar
1/3 cup fruit juice (orange, lemon)
Pinch of salt
Optional: 1/2 teaspoon vanilla extract or a pinch of cinnamon/nutmeg
Instructions
- Set Up the Double Boiler: Fill a saucepan with a couple of inches of water and bring it to a gentle simmer. Place a heatproof bowl on top, making sure it doesn’t touch the water.
- Whisk the Mixture: In the heatproof bowl, whisk the egg yolks with granulated sugar until pale and thickened, creating a light, airy texture.
- Incorporate the Liquid: Slowly pour in fruit juice while continuing to whisk. Ensure the liquid is incorporated and the mixture loosens.
- Whisk Until Thick and Velvety: Continue whisking over simmering water for 8-10 minutes, until the mixture triples in volume and becomes thick and frothy.
- Remove and Serve or Chill: Once thick, remove from heat and either serve warm or chill in the refrigerator.
Notes
Sabayon can be served with fresh berries, fruits, or cake for a delightful dessert.
Reheat gently with a double boiler to restore fluffiness if serving leftovers.
