Ingredients
Olive oil
Spicy Italian sausage, casing removed
Garlic, minced
Onion, diced
Dried oregano
Dried basil
Crushed red pepper flakes (optional)
Kosher salt
Freshly ground black pepper
Chicken broth
Bay leaf
Red potatoes, diced
Baby spinach
Heavy cream
Instructions
- Heat olive oil in a large stockpot over medium heat. Add sausage and cook until browned, crumbling as it cooks. Drain excess fat.
- Stir in garlic, onion, oregano, basil, and red pepper flakes. Cook 2–3 minutes until onions are translucent. Season with salt and pepper.
- Add chicken broth and bay leaf. Bring to a boil.
- Add diced potatoes and cook until tender, about 10 minutes.
- Stir in spinach and cook until wilted, 1–2 minutes.
- Add heavy cream and heat through, about 1 minute. Adjust seasoning if needed.
- Remove bay leaf and serve hot.
Notes
Use sweet sausage for a milder version.
Swap spinach with kale for a different texture.
Add white beans for extra protein.
Use vegetable broth and plant-based sausage for a vegetarian version.
