Description

Savory Breakfast Pop Tarts are a portable, flaky, and buttery breakfast treat, filled with scrambled eggs, cheese, and vegetables. Perfect for busy mornings or brunch gatherings, these customizable tarts offer a delicious twist on the classic handheld meal.


Ingredients

1 sheet puff pastry, thawed

2 large eggs

1/4 cup shredded cheddar cheese

1/4 cup chopped bell peppers

1/4 cup chopped spinach

1 tablespoon milk

Salt and pepper, to taste

1 egg (for egg wash)

1 tablespoon chives or green onions, finely chopped (for garnish)


Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Roll out the thawed puff pastry and cut it into 4 equal rectangles.
  3. In a bowl, beat the 2 eggs with the milk, salt, and pepper. Scramble the eggs lightly in a skillet over medium heat until just set, then remove from heat.
  4. Place a spoonful of scrambled eggs in the center of each puff pastry rectangle. Add chopped spinach, bell peppers, shredded cheese, and your choice of savory filling.
  5. Fold over each pastry rectangle to create a pocket and seal the edges by pressing them with a fork.
  6. Beat the remaining egg and brush it over the top of each tart to give them a golden, glossy finish when baked.
  7. Place the tarts on the prepared baking sheet and bake for 20-25 minutes, or until golden brown and puffed up.
  8. Remove the tarts from the oven and sprinkle with chopped chives or green onions. Serve warm.

Notes

Feel free to substitute the cheddar cheese with mozzarella, feta, or goat cheese for different flavor profiles.

If you prefer a vegetarian option, load the tarts with more vegetables like mushrooms, zucchini, or tomatoes.
