Description

This Shamrock Shake Pie is a fun, no-bake dessert inspired by the classic McDonald’s Shamrock Shake. Featuring a creamy, minty filling with a crunchy graham cracker crust and festive green color, it’s the perfect treat for St. Patrick’s Day or anytime you’re craving something cool and refreshing!

Ingredients

For the Crust:

  • Graham crackers (crushed)
  • Brown sugar
  • Unsalted butter (melted)

For the Filling:

  • Milk (2% or whole milk)
  • Green food coloring
  • Mint extract
  • Vanilla instant pudding (not Cook & Serve)
  • Whipped topping or Cool Whip

Instructions

1. Create the Crust:

  • In a blender, crush the graham crackers and brown sugar.
  • Add melted butter and mix until the crumbs stick together.
  • Press the mixture into a pie dish and freeze until firm.

2. Prepare the Pudding:

  • Whisk milk, food coloring, and mint extract in a bowl.
  • Add instant pudding mix and continue whisking until thick. Let the pudding set for 5 minutes.

3. Form the Filling:

  • Gently fold in the whipped topping with the pudding mixture until well combined.
  • Spoon the filling into the prepared crust.

4. Freeze:

  • Place the pie in the freezer for at least 6 hours, or until the filling is set.

5. Serve:

  • Once set, top with whipped cream and maraschino cherries. Slice and serve cold.

Notes

Variations

  • Chocolate Mint: Use an Oreo cookie crust and add chocolate chips or crushed Oreos into the filling for a chocolate-mint combo.
  • Crust Swap: Use a store-bought graham cracker crust or a pre-made Oreo pie crust.
  • Decorate: Top with green sprinkles, mint leaves, or crushed Girl Scout Thin Mint cookies for extra flair.

Storage and Reheating

  • Storage: Wrap the pie with plastic wrap and foil to prevent freezer burn, and store it in the freezer for up to 7 days.
  • Reheating: Serve directly from the freezer for the best texture. Avoid leaving it at room temperature for longer than 30 minutes to prevent the filling from becoming too soft.
