Ingredients

2 cups cooked, shredded chicken

1 can (4 oz) diced green chiles

1 cup sour cream

1 cup shredded cheese (Monterey Jack or Cheddar)

1 can (10 oz) green enchilada sauce

4 large flour tortillas

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

Fresh cilantro, for garnish (optional)

Instructions

  • Preheat the oven to 350°F (175°C).

  • In a large bowl, mix shredded chicken, diced green chiles, sour cream, garlic powder, onion powder, salt, and pepper.

  • Warm tortillas in a skillet for easier rolling.

  • Spoon filling into each tortilla, roll them up tightly, and place seam-side down in a greased baking dish.

  • Pour green enchilada sauce evenly over the burritos.

  • Sprinkle shredded cheese over the top.

  • Bake for 25–30 minutes, or until cheese is melted and bubbling.

  • Garnish with fresh cilantro, if desired. Serve warm.

Notes

  • Make it Spicy: Add jalapeños or use spicy enchilada sauce.

  • Add Veggies: Bell peppers, onions, or zucchini make a great veggie filling.

  • Bulk It Up: Add black beans, refried beans, or rice to the filling.

  • Storage: Store leftovers in the fridge for up to 3 days or freeze for up to 2 months.
