Ingredients

For the Meatballs:

1 lb ground chicken

1 small onion, finely chopped

2 cloves garlic, minced

1 tbsp grated ginger

1 tsp ground cumin

1 tsp ground coriander

1/2 tsp turmeric

1/2 tsp paprika

1/2 tsp salt

1/4 tsp black pepper

1/4 tsp cayenne pepper (optional)

1/4 cup breadcrumbs

1 large egg

2 tbsp vegetable oil

For the Coconut Curry Sauce:

1 tbsp vegetable oil

1 small onion, finely chopped

2 cloves garlic, minced

1 tbsp grated ginger

1 tsp ground cumin

1 tsp ground coriander

1/2 tsp turmeric

1/2 tsp paprika

1/2 tsp salt

1/4 tsp black pepper

1/4 tsp cayenne pepper (optional)

1 can (14 oz) coconut milk

1 cup chicken broth

1 tbsp cornstarch mixed with 1 tbsp water

Fresh cilantro for garnish

Lime wedges for serving


Instructions

  1. Make the Meatballs:

    • In a large bowl, combine ground chicken, onion, garlic, ginger, cumin, coriander, turmeric, paprika, salt, pepper, cayenne, breadcrumbs, and egg. Mix well and form into 1-inch meatballs.

  2. Cook the Meatballs:

    • Heat vegetable oil in a skillet over medium heat. Add the meatballs and cook for 5–7 minutes, turning occasionally, until golden brown on all sides. Remove and set aside.

  3. Prepare the Curry Sauce:

    • In the same skillet, add oil and sauté onion, garlic, and ginger for 2–3 minutes. Add cumin, coriander, turmeric, paprika, salt, black pepper, and cayenne. Cook for another minute until fragrant.

  4. Simmer the Sauce:

    • Pour in coconut milk and chicken broth, stirring to combine. Bring to a simmer, then add the cornstarch mixture to thicken the sauce. Stir and cook for 5 minutes.

  5. Cook the Meatballs in the Sauce:

    • Return the meatballs to the skillet and simmer for 10–15 minutes, until the meatballs are cooked through and the sauce has thickened.

  6. Serve:

    • Garnish with fresh cilantro and serve with lime wedges.

Notes

Different Protein: Swap ground chicken for turkey, beef, or firm tofu for a variation.
