Ingredients
Puff pastry (fresh or frozen, thawed)
Fresh or frozen spinach (thawed and drained)
Feta cheese, crumbled (preferably from block)
Olive oil
Garlic, minced
Onion, finely chopped (optional)
Nutmeg (a pinch)
Salt and pepper to taste
Optional herbs and spices (oregano, chili flakes, parsley)
1 egg (for egg wash)
Instructions
- Sauté fresh spinach in olive oil until wilted, or thaw frozen spinach and squeeze out excess water.
- Mix spinach with crumbled feta, minced garlic, salt, pepper, and a pinch of nutmeg. Add optional herbs or chili flakes if desired.
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out puff pastry on a lightly floured surface into a rectangle.
- Spread spinach-feta mixture evenly over half of the pastry, leaving a border around edges.
- Fold pastry over filling and press edges to seal.
- Cut into 1-inch wide strips and twist each strip gently into a spiral.
- Brush twists with beaten egg for a golden finish.
- Place twists on baking sheet and bake for 15–20 minutes until puffed and golden brown.
Notes
Ensure spinach is well-drained to prevent soggy pastry.
Keep puff pastry cold until baking to help it rise well.
Use block feta for creamier texture and better flavor.
