Description

Spinach and Ricotta Rolls are a savory snack or appetizer made with flaky puff pastry and a creamy, cheesy filling of ricotta, cheddar, parmesan, and spinach. Perfect for parties, gatherings, or a quick snack, these rolls can be made in the oven or air fryer.


Ingredients

For the Rolls:

1 tablespoon olive oil

2 cups baby spinach

2 cloves garlic, minced

1 cup ricotta cheese

1/2 cup parmesan cheese

1/2 cup cheddar cheese

1 egg

1/4 cup shallots or green onions, chopped

Salt and pepper to taste

1 sheet puff pastry

Sesame seeds (optional, for garnish)


Instructions

Oven Method:

Preheat your oven to 350°F (180°C). Line baking sheets with parchment paper.

Heat olive oil in a pan over medium heat. Add garlic and sauté for 30 seconds, then add spinach and cook until wilted.

In a mixing bowl, combine ricotta cheese, parmesan cheese, cheddar cheese, egg, shallots (or green onions), and season with salt and pepper. Stir in the cooked spinach mixture.

Roll out the puff pastry and cut into rectangles. Place a spoonful of the spinach and cheese filling along one edge of each rectangle. Roll tightly to enclose the filling.

Brush the rolled pastries with beaten egg and sprinkle with sesame seeds (optional).

Refrigerate the rolls for 15 minutes to firm up, then cut them into bite-sized pieces.

Bake for 25 minutes or until golden and crispy.

Air Fryer Method:

Prepare the rolls as outlined above.

Place the rolls in the air fryer basket and cook at 390°F (200°C) for 15-20 minutes, or until golden and cooked through.

Notes

Variations

Add feta: Swap out some of the ricotta with feta cheese for a tangy twist.

Swap spinach: Use kale or Swiss chard instead of spinach for different flavors.

Make them vegan: Substitute dairy-free cheese and use an egg replacer for a plant-based version.


Storage/Reheating

Storage: Store leftover rolls in an airtight container in the fridge for up to 3 days.

Freezing: Freeze the uncooked rolls and bake them directly from frozen for 5-10 extra minutes.
