Ingredients
For the Crust & Crumble:
- 1 1/4 cups all-purpose flour
- 1 1/4 cups old-fashioned rolled oats
- 3/4 cup granulated sugar
- 1/4 cup light brown sugar, packed
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 3/4 cup unsalted butter, melted
For the Strawberry Filling:
- 2 cups diced fresh strawberries
- 1/4 cup granulated sugar
- 2 teaspoons cornstarch
Instructions
1️⃣ Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or foil, leaving an overhang for easy removal. Lightly grease.
2️⃣ Prepare the crust & crumble: In a large bowl, mix together flour, oats, granulated sugar, brown sugar, cinnamon, and salt. Pour in melted butter and mix until crumbly.
3️⃣ Form the crust: Press two-thirds of the mixture firmly into the bottom of the pan to create a solid crust.
4️⃣ Make the filling: In another bowl, toss the diced strawberries with granulated sugar and cornstarch. Mix well until the strawberries are coated.
5️⃣ Assemble: Spread the strawberry mixture evenly over the crust. Sprinkle the remaining oat crumble mixture over the top.
6️⃣ Bake: Place in the oven and bake for 35-40 minutes, or until the top is golden brown and the strawberry filling is bubbling.
7️⃣ Cool & Serve: Allow bars to cool completely before lifting them out of the pan. Slice into squares and enjoy!
