Description

This sugar-free, low-carb keto lemon cottage cheese fluff is a light, creamy, and refreshing dessert that satisfies your sweet tooth without the guilt. Made with just a few simple, keto-friendly ingredients, it delivers a tangy citrus flavor and a fluffy, protein-packed texture—perfect for a healthy treat!

Ingredients

  • 8 ounces cottage cheese (4%)
  • ¼ cup fresh lemon juice
  • 2 teaspoons gelatin
  • 8 ounces heavy cream
  • 1 teaspoon lemon stevia (or vanilla stevia, or your preferred low-carb sweetener)
  • 1 teaspoon lemon zest (optional)

Instructions

1. Blend the Cottage Cheese:
Place the cottage cheese in a blender or food processor and blend until smooth. Set aside.

2. Prepare the Gelatin:
Heat the lemon juice in a small saucepan over low heat or microwave for 1-2 minutes until warm. Sprinkle the gelatin over the lemon juice and stir until dissolved.

3. Whip the Cream:
In a separate mixing bowl, whip the heavy cream with stevia (or chosen sweetener) until soft peaks form.

4. Combine Ingredients:
Gently fold the whipped cream into the blended cottage cheese. Then, slowly mix in the lemon juice and gelatin mixture until well combined.

5. Chill & Serve:
Transfer the mixture into serving cups and refrigerate for at least 2 hours to allow the fluff to set. Garnish with lemon zest before serving.

Notes

  • Lime Fluff: Swap lemon juice for lime juice for a tangy twist.
  • Berry Addition: Fold in fresh raspberries or blueberries before chilling.
  • Dairy-Free Option: Use coconut cream instead of heavy cream.
  • Extra Sweetness: Add more stevia, monk fruit, or a touch of powdered erythritol.
