Ingredients

  • 1 medium-sized butternut squash
  • 2 chicken breasts (boneless, skinless)
  • 2 tablespoons olive oil
  • 1 teaspoon ground cinnamon
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon honey
  • Fresh thyme (optional for garnish)

Instructions

  • Preheat the oven to 400°F (200°C).
  • Cut the butternut squash in half lengthwise, remove the seeds, and drizzle with olive oil. Sprinkle with cinnamon, garlic powder, salt, and pepper. Roast for 30-40 minutes until tender.
  • Cook the chicken in olive oil, seasoning with salt, pepper, and cinnamon, for 6-7 minutes per side. Shred the chicken once cooked.
  • Scoop out some flesh from the roasted squash and stuff with shredded chicken. Drizzle with honey and garnish with thyme if desired.
  • Return to the oven for 10-15 more minutes and serve.
