Description
A light and elegant Swiss chocolate sponge roll filled with fluffy whipped cream and tart cherries, topped with chocolate shavings and fresh cherries, perfect for celebrations or a decadent dessert any day.
Ingredients
4 large eggs
3/4 cup granulated sugar
1 teaspoon vanilla extract
1/4 cup unsweetened cocoa powder
1 1/2 cups heavy whipping cream
1/4 cup powdered sugar
1 teaspoon vanilla extract
1 cup cherry pie filling or fresh cherries
2 tablespoons cherry liqueur (optional)
1/2 cup chocolate shavings or curls
Fresh cherries for garnish
Instructions
- Preheat oven to 350°F (175°C). Line a 15×10-inch jelly roll pan with parchment paper and lightly grease it.
- In a large bowl, beat the eggs and granulated sugar until thick and pale. Stir in vanilla extract and cocoa powder until smooth.
- Pour the batter into the prepared pan, spreading evenly. Bake for 12–15 minutes, or until it springs back when lightly touched.
- Let the cake cool for a few minutes, then invert it onto a clean kitchen towel dusted with powdered sugar. Peel off the parchment and roll the cake up gently with the towel (from the short end). Cool completely rolled.
- In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
- Unroll the cooled cake and spread with whipped cream, leaving a border around the edges.
- Spoon the cherry filling evenly over the whipped cream. Drizzle with cherry liqueur if using.
- Carefully roll the cake back up (without the towel), seam-side down on a serving platter.
- Use remaining whipped cream to decorate the top. Sprinkle with chocolate shavings and garnish with fresh cherries.
- Slice and serve chilled for best results.
Notes
Roll the cake while warm using a powdered sugar-dusted towel to prevent cracking.
Use fresh or thawed cherries well-drained to avoid excess moisture.
Store covered in the refrigerator for up to 3 days to keep whipped cream fresh.
Freezing is not recommended as whipped cream texture may degrade.
Chocolate shavings can be made with a vegetable peeler on a chocolate bar.
