Description

Ingredients

  • 4 cups diced potatoes (about 3 medium potatoes)
  • ½ lb ground beef or breakfast sausage
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder
  • Salt and pepper, to taste
  • Optional: 2 eggs (fried or scrambled) for serving

Instructions

  1. Heat vegetable oil in a large skillet over medium-high heat.
  2. Add diced potatoes and cook, stirring occasionally, until they begin to crisp and soften, about 10-12 minutes.
  3. Add diced onion, green bell pepper, and garlic; cook until softened, about 5 minutes.
  4. Add ground beef or sausage, breaking it up with a spoon. Cook until browned and fully cooked.
  5. Season with smoked paprika, chili powder, salt, and pepper. Stir well to combine.
  6. Continue cooking for another 5 minutes until potatoes are tender and edges are crispy.
  7. Serve hot, optionally topped with fried or scrambled eggs.
