Ingredients
- 4 cups diced potatoes (about 3 medium potatoes)
- ½ lb ground beef or breakfast sausage
- 1 medium onion, diced
- 1 green bell pepper, diced
- 2 cloves garlic, minced
- 2 tablespoons vegetable oil
- 1 teaspoon smoked paprika
- ½ teaspoon chili powder
- Salt and pepper, to taste
- Optional: 2 eggs (fried or scrambled) for serving
Instructions
- Heat vegetable oil in a large skillet over medium-high heat.
- Add diced potatoes and cook, stirring occasionally, until they begin to crisp and soften, about 10-12 minutes.
- Add diced onion, green bell pepper, and garlic; cook until softened, about 5 minutes.
- Add ground beef or sausage, breaking it up with a spoon. Cook until browned and fully cooked.
- Season with smoked paprika, chili powder, salt, and pepper. Stir well to combine.
- Continue cooking for another 5 minutes until potatoes are tender and edges are crispy.
- Serve hot, optionally topped with fried or scrambled eggs.
