Description
The Ultimate Cookie Dough Ice Cream Sandwich combines homemade cookie dough, rich vanilla ice cream, and classic chocolate chip cookies for an indulgent dessert that’s perfect for any occasion.
Ingredients
1 stick unsalted butter, softened
2 tbsp granulated sugar
⅓ cup brown sugar, packed
2 tbsp whole milk
1 tsp vanilla extract
1 ¼ cups flour
¼ teaspoon kosher salt
1 ⅓ cups semisweet chocolate chips or disks (divided)
4 cups half-and-half
1 can sweetened condensed milk (14 ounces)
2 tablespoons vanilla extract
36 chocolate chip cookies (store-bought or homemade)
Instructions
- Cookie Dough Preparation: Cream the butter, granulated sugar, and brown sugar until light and fluffy. Add milk and vanilla extract, then mix in the flour and salt until fully incorporated.
- Prepare the Cookie Dough for Ice Cream: Take ⅓ of the dough and freeze it without chocolate chips. Stir in ⅓ cup of chocolate chips into the rest of the dough and freeze the cookie dough (without chocolate chips) on a sheet. Cut into small squares once frozen and set aside.
- Ice Cream Base: Melt the portion of cookie dough without chocolate chips in the microwave. In a large bowl, mix the melted cookie dough, half-and-half, sweetened condensed milk, and vanilla extract until well combined. Freeze according to the ice cream maker’s instructions.
- Add Cookie Dough Chunks: One minute before churning is done, add the cookie dough chunks and the remaining chocolate chips.
- Freeze the Ice Cream: Transfer the ice cream to a pan and top with more cookie dough and chocolate chips. Freeze for 4-6 hours or overnight.
- Assemble the Sandwiches: Scoop about ⅓ cup of ice cream between two chocolate chip cookies and gently press to form the sandwich.
- Freeze the Sandwiches: Freeze the assembled sandwiches for 1-2 hours to keep the ice cream firm and the sandwich together.
Notes
Switch up the cookies: Use peanut butter, oatmeal, or snickerdoodle cookies for a new twist.
Roll the sides in mini chocolate chips, sprinkles, or crushed nuts for added texture and flavor.
For a richer treat, add a fudge swirl to the ice cream mixture.
Store leftovers in an airtight container in the freezer for up to 2 weeks.
