Ingredients
1 refrigerated pie crust (9-inch)
3 to 4 medium ripe tomatoes, sliced
1 teaspoon salt
1 cup shredded sharp cheddar cheese
½ cup mayonnaise
¼ cup chopped fresh basil or parsley
¼ teaspoon black pepper
¼ cup grated Parmesan cheese
1 teaspoon dried oregano or Italian seasoning
Instructions
- Preheat oven to 350°F (175°C).
- Place pie crust into a 9-inch pie plate and crimp edges.
- Arrange sliced tomatoes in overlapping layers in crust. Sprinkle with salt and let sit 10 minutes to draw out moisture. Drain liquid.
- In a bowl, mix cheddar cheese, mayonnaise, herbs, pepper, Parmesan, and oregano until combined.
- Spread cheese mixture evenly over tomatoes.
- Bake 30–35 minutes until cheese is bubbly and golden.
- Let cool slightly before slicing and serving.
Notes
Use mozzarella or pepper jack cheese for variation.
Mix fresh thyme or oregano for different herb flavors.
