Description

Tomato Pie is a Southern classic savory tart with ripe tomatoes, fresh herbs, tangy mayonnaise, and sharp cheese baked in a flaky pie crust. Perfect for summer gatherings or as a comforting side dish.


Ingredients

1 refrigerated pie crust (9-inch)

3 to 4 medium ripe tomatoes, sliced

1 teaspoon salt

1 cup shredded sharp cheddar cheese

½ cup mayonnaise

¼ cup chopped fresh basil or parsley

¼ teaspoon black pepper

¼ cup grated Parmesan cheese

1 teaspoon dried oregano or Italian seasoning


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Place pie crust into a 9-inch pie plate and crimp edges.
  3. Arrange sliced tomatoes in overlapping layers in crust. Sprinkle with salt and let sit 10 minutes to draw out moisture. Drain liquid.
  4. In a bowl, mix cheddar cheese, mayonnaise, herbs, pepper, Parmesan, and oregano until combined.
  5. Spread cheese mixture evenly over tomatoes.
  6. Bake 30–35 minutes until cheese is bubbly and golden.
  7. Let cool slightly before slicing and serving.

Notes

Use mozzarella or pepper jack cheese for variation.

Mix fresh thyme or oregano for different herb flavors.

Use gluten-free pie crust to make gluten-free.
