Description

This Traeger Lion’s Mane Mushroom Recipe combines the meaty texture of lion’s mane mushrooms with smoky, savory flavors, making it the perfect vegan side dish. Smoked on a Traeger grill, these mushrooms are tender, umami-packed, and full of depth, making them a great addition to any meal.

Ingredients

1 pound lion’s mane mushrooms, torn into bite-sized pieces

2 tablespoons olive oil

1 teaspoon garlic powder

½ teaspoon smoked paprika

Salt and pepper to taste

1 tablespoon soy sauce or tamari

Fresh parsley for garnish (optional)

Instructions

  1. Preheat your Traeger grill to 225°F (107°C) using hickory or oak pellets.

  2. In a large bowl, toss the lion’s mane mushrooms with olive oil, garlic powder, smoked paprika, salt, pepper, and soy sauce.

  3. Spread the mushrooms in a single layer on a grill-safe baking tray or grill mat.

  4. Smoke the mushrooms for 45 minutes to 1 hour, stirring halfway through, until they are tender and slightly crispy on the edges.

  5. Remove from the grill, garnish with fresh parsley (if desired), and serve warm.

Notes

Use lemon juice after smoking for a fresh, tangy kick.

For an extra depth of flavor, drizzle with truffle oil before serving.

Experiment with different fresh herbs like thyme or rosemary.

Store leftovers in an airtight container in the fridge for up to 3 days; reheat gently.
