Description

Tropical Pineapple Chicken & Rice Delight is a quick and colorful dinner packed with sweet pineapple, juicy chicken, and savory soy sauce—all served over fluffy rice. This easy, 7-ingredient tropical chicken rice dish is perfect for busy nights and meal prep!

Ingredients

1 lb chicken breast, diced

1 can (20 oz) pineapple chunks in juice, drained

1 cup uncooked white rice

1 cup diced bell peppers (red, green, yellow mix)

½ cup soy sauce

1 tbsp olive oil

1 tsp garlic powder

Instructions

  • Cook the Rice:
In a saucepan, bring 2 cups of water to a boil. Add the rice, reduce heat to low, cover, and simmer for 15–20 minutes until tender and fluffy. Set aside.

  • Sauté the Chicken:
In a large skillet, heat olive oil over medium heat. Add diced chicken and season with garlic powder. Cook until chicken is golden brown and fully cooked through, about 6–8 minutes.

  • Add Bell Peppers and Pineapple:
Stir in the diced bell peppers and drained pineapple chunks. Cook for 5 minutes until the veggies are tender and pineapple is warmed through.

  • Add Soy Sauce:
Pour in the soy sauce and stir everything together. Let simmer for 2–3 minutes so the flavors combine.

  • Combine with Rice:
Add the cooked rice to the skillet and stir until evenly mixed and heated through.

  • Serve:
Remove from heat and garnish with chopped green onions, cilantro, or sesame seeds if desired.

Notes

Variations:

Protein Swap: Use shrimp, tofu, or tempeh instead of chicken.

Grain Swap: Substitute brown rice, cauliflower rice, or quinoa.

Tropical Twist: Add diced mango, papaya, or even a splash of coconut milk.

Heat it Up: Add chili flakes or diced jalapeño for a spicy kick.

Storage & Reheating:

Fridge: Store in an airtight container for up to 3 days.

Freezer: Freeze for up to 3 months. Thaw in the fridge overnight before reheating.

Reheat: Microwave with a splash of water or reheat in a skillet over medium heat.
