Description

This Turkey Sweet Potato Skillet combines lean ground turkey, tender sweet potatoes, and fresh vegetables in a one-pan meal, seasoned with cumin and smoked paprika. Ready in just 30 minutes, this healthy, protein-packed dish is perfect for a quick, flavorful weeknight dinner.

Ingredients

  • 1 pound ground turkey
  • 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups spinach, chopped
  • Fresh parsley for garnish

Instructions

  • Sauté the Aromatics:

    • Heat olive oil in a large skillet over medium heat.
    • Add the onion and garlic, sautéing for 2-3 minutes until translucent.
  • Cook the Sweet Potatoes:

    • Add the diced sweet potatoes to the skillet. Cook for about 10 minutes, stirring occasionally, until they begin to soften.
  • Cook the Turkey:

    • Add the ground turkey to the skillet, breaking it apart as it cooks. Cook for 5-7 minutes until browned and fully cooked.
  • Season the Skillet:

    • Season with smoked paprika, cumin, salt, and pepper. Stir to combine and enhance the flavors.
  • Add the Veggies:

    • Add the chopped bell pepper and spinach. Cook for another 3-4 minutes until the spinach wilts and the bell pepper softens.
  • Finish and Serve:

    • Remove from heat and garnish with fresh parsley. Serve warm.

Notes

  • Add More Veggies: Zucchini, mushrooms, or peas are great additions.
  • Spicy Twist: Add chili flakes or cayenne pepper for extra heat.
  • Protein Variations: Swap turkey for chicken, beef, or plant-based crumbles for different options.
