Description
Soft, fluffy chocolate hazelnut rolls filled with Nutella and brown sugar, topped with a creamy Nutella cream cheese frosting. Perfect for brunch, holidays, or a comforting treat.
Ingredients
¾ cup 2% or whole milk
¼ oz active dry yeast
2 tbsp granulated sugar (24g)
4 tbsp unsalted butter, room temperature (57g)
¼ cup light brown sugar (48g)
1 large egg
2 tsp vanilla extract
1¾ cups bread flour (210g)
1¼ cups all-purpose flour (150g)
½ tsp salt
Neutral oil (for greasing bowl)
¼ cup + 1 tbsp Nutella or chocolate hazelnut spread (93g)
⅓ cup light brown sugar (64g)
1 tbsp cocoa powder
3 tbsp Nutella (56g) for frosting
3 tbsp cream cheese (45g) for frosting
½ cup powdered sugar (60g) for frosting
1 tsp milk for frosting
Instructions
- Warm milk until lukewarm, sprinkle yeast over it and let sit for 5–10 minutes to activate.
- In a large bowl, combine granulated sugar, butter, brown sugar, egg, and vanilla. Stir in the activated yeast mixture.
- Gradually add bread flour, all-purpose flour, and salt. Mix and knead until a soft, elastic dough forms (8–10 minutes by hand or 5–6 minutes with mixer).
- Lightly oil a clean bowl, place dough inside, cover, and let rise in a warm spot until doubled in size (1 to 1½ hours).
- Preheat oven to 350°F (175°C).
- Roll dough out on floured surface into a large rectangle. Spread Nutella evenly across.
- Sprinkle with brown sugar and cocoa powder, then roll tightly into a log.
- Slice into 1½-inch pieces and arrange in greased baking dish.
- Bake 25–30 minutes until golden and puffed.
- Beat Nutella, cream cheese, powdered sugar, and milk until smooth for frosting.
- Frost rolls warm for melty glaze or cool for thicker layer.
Notes
Substitute 2 tbsp milk with heavy cream for richer dough.
Assemble rolls ahead and refrigerate overnight; bring to room temp and let rise before baking.
Use parchment paper for easy cleanup.
Add chopped toasted hazelnuts inside filling for crunch.
Store leftovers in airtight container up to 3 days.
Reheat briefly in microwave or oven to refresh softness.
