Description

This Ultimate Pineapple Juice Cake is a moist, tropical dessert made with pineapple juice and crushed pineapple. Its fluffy texture and sweet pineapple glaze make it an irresistible treat for any occasion.


Ingredients

30 wonton wrappers

1 lb Monterey Jack cheese, cut into 1/2 to 1 1/2-inch strips

Green chilies and hot green chiles, cut into strips

Oil, for frying

1/4 cup soy sauce

1 tablespoon rice vinegar

1 minced jalapeño

1 teaspoon honey

1 teaspoon sesame oil


Instructions

  1. Prep the Pan: Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish or bundt pan. Optionally, sprinkle coconut or chopped pecans in the pan for added crunch.
  2. Mix Dry Ingredients: In a medium-sized bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. Whisk Wet Ingredients: In another bowl, beat together the sugar, oil, eggs, and vanilla extract until smooth. Add the pineapple juice and crushed pineapple, mixing until fully combined.
  4. Combine and Bake: Gradually fold the dry ingredients into the wet mixture. Pour the batter into the prepared pan and bake for 30-35 minutes or until golden brown and a toothpick inserted comes out clean.
  5. Cool and Glaze: Allow the cake to cool completely on a wire rack. In the meantime, prepare the glaze by mixing powdered sugar and pineapple juice until smooth. Drizzle the glaze over the cooled cake for a glossy finish.
