Description

These White Chocolate Strawberry Truffles feature a rich strawberry ganache center coated in smooth white chocolate. Perfect for special occasions or as homemade gifts, they offer the ideal balance of tangy strawberry and creamy white chocolate, with the intense fruit flavor of freeze-dried strawberries.

Ingredients

For the Truffles:

1 cup white chocolate, chopped

1/2 cup heavy cream

1/4 cup freeze-dried strawberries, blended into powder

For the Coating:

1 cup white chocolate, chopped

1 tablespoon freeze-dried strawberries, crushed

Instructions

1. Make the Ganache:

  • Heat the heavy cream in a saucepan over medium heat until it simmers.
  • Pour the cream over the chopped white chocolate and let it sit for 2 minutes. Stir until the chocolate is completely melted and smooth.
  • Add the freeze-dried strawberry powder to the ganache and mix well.
  • Refrigerate the mixture for about 2-3 hours until firm and set.

2. Roll the Truffles:

  • Scoop out the chilled ganache and roll it into 1-inch balls.
  • Return the balls to the fridge to chill again for at least 30 minutes.

3. Coat the Truffles:

  • Melt white chocolate for the coating in a microwave-safe bowl in 20-30 second intervals, stirring between each.
  • Dip each truffle into the melted white chocolate to coat completely.
  • Sprinkle the truffles with crushed freeze-dried strawberries for extra flavor and texture.
  • Let the truffles cool and harden in the fridge for about 30 minutes.

Notes
