Ingredients
2 large zucchinis
1 large ripe tomato, thinly sliced
2 tbsp olive oil
Salt and pepper to taste
1 tsp garlic powder
1 tsp Italian seasoning
1 cup shredded mozzarella cheese (or any preferred cheese)
Instructions

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

Slice the zucchinis into 1/4-inch thick pieces. Brush with olive oil on both sides and place them on the baking sheet.

Sprinkle the zucchini slices with salt, pepper, garlic powder, and Italian seasoning on both sides.

Top each zucchini slice with a thin tomato slice.

Sprinkle shredded mozzarella cheese over the tomato slices.

Bake for 12-15 minutes, or until the cheese is melted and lightly browned.

Notes
Swap mozzarella for Parmesan, goat cheese, or a blend of Italian cheeses.
