Description

Zucchini Cookies with Cream Cheese Frosting are soft, spiced cookies made with garden-fresh zucchini and topped with a creamy, tangy frosting. Perfect for using up excess zucchini, these cookies are a delightful treat for any occasion.


Ingredients

1/2 cup butter, softened

1 cup granulated sugar

1 egg

1 teaspoon vanilla extract

1 cup grated zucchini (squeeze out excess moisture)

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

For the Frosting:

4 oz cream cheese, softened

2 tablespoons butter, softened

1 1/2 cups powdered sugar

1/2 teaspoon vanilla extract


Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together the butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract.
  3. Stir in the grated zucchini, ensuring excess moisture is squeezed out.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. Drop tablespoon-sized balls of dough onto the prepared baking sheets, spacing them 2 inches apart. Bake for 10-12 minutes, or until the edges are golden and a toothpick comes out clean. Cool completely on a wire rack.
  6. For the frosting, beat the softened cream cheese and butter until smooth. Add powdered sugar and vanilla extract, beating until light and fluffy.
  7. Once the cookies are cooled, frost them with the cream cheese frosting. Serve and enjoy!

Notes

For extra texture, add chocolate chips, nuts, or raisins to the dough.

If you prefer a spicier flavor, add ground ginger or cloves along with the cinnamon and nutmeg.
