These Baked Feta Potatoes are a delicious twist on the viral baked feta pasta trend. Crispy roasted potatoes are topped with creamy, tangy feta, roasted garlic, and a burst of fresh lemon and herbs. This easy-to-make, flavorful side dish will elevate any meal, perfect for weeknight dinners or holiday gatherings.
Ingredients
- 1–2 large baking potatoes
- 1 (200g) block of feta
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 tsp salt
- 1 tsp black pepper
- 1 head of garlic (top cut off)
- 1 lemon, quartered
- 1 tbsp honey
Instructions
- Preheat the oven to 390°F (200°C).
- Wash and cube the potatoes, then add them to a baking dish.
- Sprinkle the potatoes with thyme, oregano, salt, and pepper, and drizzle with 1 tablespoon of olive oil. Toss to coat.
- Place the feta block in the center of the dish, surrounding it with the potatoes. Add the garlic and lemon quarters, and drizzle everything with a little more olive oil.
- Bake for 45-55 minutes, or until the potatoes are golden and crispy.
- Once done, remove the garlic from the dish, squeeze out the softened cloves, and mash them into the potatoes.
- Mash the baked feta and mix it with the potatoes, garlic, and a squeeze of lemon juice. Garnish with fresh basil and serve.
Notes
- For a different flavor, swap feta with goat cheese, Boursin, or any soft cheese block.
- Add cherry tomatoes or sun-dried tomatoes for extra flavor.
- Spice things up by adding chili flakes or paprika.
