Ingredients

12 oz fettuccine

1 lb shrimp, peeled and deveined

2 tbsp olive oil

3 tbsp butter

4 cloves garlic, minced

1 cup heavy cream

½ cup grated Parmesan cheese

½ cup sun-dried tomatoes, chopped

2 cups fresh spinach

1 tsp Italian seasoning

½ tsp red pepper flakes (optional)

Salt and pepper, to taste

½ cup chicken broth

1 tbsp lemon juice


Instructions

  • Cook the Pasta: Boil a large pot of salted water. Cook fettuccine according to package directions, then drain. Reserve ½ cup pasta water.

  • Sauté the Shrimp: Heat olive oil and 1 tbsp butter in a large skillet over medium heat. Cook shrimp for 2–3 minutes per side until pink and opaque. Remove from skillet and set aside.

  • Make the Sauce: In the same skillet, melt remaining butter and sauté garlic for 1 minute. Add sun-dried tomatoes and cook 1 minute more.

  • Simmer: Add heavy cream and chicken broth, bring to a simmer. Stir in Parmesan, Italian seasoning, and red pepper flakes. Simmer until thickened and creamy.

  • Add Spinach: Stir in spinach until wilted (2–3 minutes).

  • Combine: Add shrimp and cooked fettuccine. Toss to coat. Loosen with reserved pasta water if needed. Finish with lemon juice, salt, and pepper to taste.

  • Serve: Plate and garnish with extra Parmesan or parsley, if desired.
