Description

Blueberry Cream Cheese Egg Rolls are a delightful dessert with a crispy exterior and a sweet, creamy filling. Packed with juicy blueberries and a tangy cream cheese mixture, these egg rolls are deep-fried to golden perfection. They’re perfect for brunch, parties, or as a fun after-dinner treat.

Ingredients

For the Dough:

8 egg roll wrappers

1 egg (beaten, for sealing)

For the Filling:

8 oz cream cheese, softened

¼ cup granulated sugar

1 tsp vanilla extract

1 cup fresh or frozen blueberries

1 tbsp cornstarch (only if using frozen blueberries)

1 tbsp lemon juice

For Frying:

Oil for frying

Powdered sugar for garnish

Instructions

  1. Prepare the Filling: In a medium bowl, mix cream cheese, granulated sugar, and vanilla extract until smooth and creamy. In another bowl, toss the blueberries with lemon juice. If using frozen blueberries, add cornstarch to prevent excess moisture.
  2. Assemble the Egg Rolls: Lay an egg roll wrapper on a clean surface. Place 1-2 tablespoons of cream cheese mixture in the center. Top with a spoonful of the blueberry mixture. Brush the edges with the beaten egg and fold to seal, pressing the edges with a fork.
  3. Fry the Egg Rolls: Heat oil in a deep pan or fryer to 350°F (175°C). Fry the egg rolls in small batches, about 2-3 minutes per side, until golden and crispy. Drain on paper towels.
  4. Serve: Dust with powdered sugar before serving. Serve warm for the best taste.

Notes

Don’t Overfill: Avoid overfilling to prevent the egg rolls from bursting open.

Seal Properly: Ensure the egg rolls are tightly sealed, using the egg wash to secure the edges.

Make Ahead: Prepare the filling and assemble the egg rolls ahead of time, refrigerating them before frying.
