Ingredients

For the Crepes:

1 cup all-purpose flour

1½ cups milk

4 large eggs

3 tbsp unsalted butter, melted

Pinch of salt

For the Chocolate Brownie Filling:

½ cup unsalted butter

1 cup granulated sugar

2 large eggs

1 tsp vanilla extract

⅓ cup unsweetened cocoa powder

⅔ cup all-purpose flour

¼ tsp salt

¼ tsp baking powder

For the Chocolate Drizzle:

½ cup dark chocolate chips

2 tbsp unsalted butter

1 tbsp heavy cream

For the Assembly:

Vanilla ice cream

Fresh berries (optional)

Powdered sugar (optional)


Instructions

Prepare the Crepes:

  1. In a blender, combine flour, milk, eggs, melted butter, and salt. Blend until smooth and let the batter rest for 30 minutes.

  2. Heat a non-stick skillet over medium heat, lightly grease with butter, and pour ¼ cup batter into the pan, swirling to coat evenly.

  3. Cook for 1–2 minutes per side until lightly golden. Repeat with remaining batter.

Prepare the Chocolate Brownie Filling:

  1. Preheat oven to 350°F (175°C) and grease a baking dish.

  2. Melt butter, then mix with sugar. Add eggs and vanilla extract and mix well.

  3. In a separate bowl, combine cocoa powder, flour, salt, and baking powder. Gradually mix dry ingredients into wet until smooth.

  4. Pour into prepared dish and bake for 20–25 minutes. Cool, then crumble into small pieces.

Prepare the Chocolate Drizzle:

  1. Melt chocolate chips and butter together in 30-second intervals in the microwave, stirring between each.

  2. Stir in heavy cream until smooth.

Assemble the Crepes:

  1. Spread crumbled brownie filling along the center of each crepe, fold or roll up.

  2. Top with a scoop of vanilla ice cream.
