Description

This Easy Creamy Taco Soup is the ultimate comfort food, combining seasoned beef (or turkey) with creamy cheese and zesty tomatoes. Ready in just 30 minutes, this hearty and flavorful soup is perfect for busy nights or casual gatherings. It’s easy to make, highly customizable, and always a crowd-pleaser.

Ingredients

1 lb ground beef (or turkey, or vegetarian option)

1 onion, chopped

2 garlic cloves, minced

1 packet taco seasoning

1 can (14.5 oz) diced tomatoes (with juices)

4 cups chicken broth (or vegetable broth)

8 oz cream cheese, softened

Optional toppings: shredded cheese, fresh cilantro, tortilla chips, sour cream, or Greek yogurt

Instructions

  • Brown the Meat: In a large pot, brown the ground beef over medium heat. Drain excess fat.

  • Sauté the Vegetables: Add the chopped onion and minced garlic to the pot. Sauté for about 5 minutes, until the onion softens.

  • Add Seasonings and Tomatoes: Stir in taco seasoning and diced tomatoes (with juices). Mix everything together.

  • Pour in the Broth: Add the chicken broth and bring the mixture to a simmer for about 10 minutes.

  • Add Cream Cheese: Cut softened cream cheese into chunks and stir it into the soup. Allow it to melt and blend smoothly into the broth.

  • Serve: Ladle the soup into bowls and add any desired toppings like shredded cheese, cilantro, tortilla chips, or sour cream. Enjoy!

Notes

Vegetarian Option: Replace the meat with beans or lentils and use vegetable broth.

Spicy Version: Add jalapeños, chili powder, or crushed red pepper flakes for heat.

Light Version: Use low-fat cream cheese or Greek yogurt to lighten up the soup.

Toppings: Customize with shredded cheese, fresh cilantro, or tortilla chips.
