Ingredients
¾ cup unsalted butter
3 cups Corn Flakes cereal, crushed
1 tablespoon ground cinnamon
¼ cup sugar
9 cups vanilla ice cream
4 cups whipped cream
½ cup honey
12 maraschino cherries, with stems
Instructions
- Prepare the Cornflake Coating: In a small saucepan, melt the butter over medium heat. Add the crushed corn flakes and cinnamon. Stir often for 6-8 minutes, or until the corn flakes are browned and toasted. Remove from heat and stir in the sugar.
- Assemble the Casserole: Add half of the cornflake mixture to a 9×13-inch baking dish, spreading it into an even layer. Scoop the vanilla ice cream over the cornflakes and use a knife or offset spatula to spread the ice cream evenly across the dish.
- Top with Cornflakes: Sprinkle the remaining cornflake mixture evenly over the top of the ice cream layer.
- Freeze the Casserole: Cover the casserole and freeze for a minimum of 4 hours, or until the ice cream is firm.
- Serve: When ready to serve, cut into slices and top with whipped cream, a drizzle of honey, and a maraschino cherry for a finishing touch.
Notes
For a different flavor, swap the vanilla ice cream for chocolate, strawberry, or coffee.
Add nuts like pecans or almonds to the cornflake mixture for extra crunch.
For a richer flavor, drizzle caramel along with honey on top.
