Ingredients
2 cups all-purpose flour
1 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
2 cups grated apples (about 2–3 medium apples)
1 teaspoon ground cinnamon
1 teaspoon baking powder
½ teaspoon baking soda
1 teaspoon vanilla extract
½ cup chopped walnuts or pistachios (optional)
Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Grate the apples and squeeze out any excess juice using a clean cloth.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then add vanilla extract and mix well.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and ground cinnamon.
- Gradually add the dry ingredients to the wet mixture and stir until just combined.
- Gently fold in the grated apples and chopped nuts if using.
- Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them apart.
- Bake for 15–20 minutes, or until the edges are lightly golden.
- Allow cookies to cool on the baking sheet for 10 minutes before transferring to a wire rack.
- Optionally, dust with powdered sugar before serving.
Notes
Use tart apples for a flavor contrast, or sweet ones for extra sweetness.
Peeling apples is optional based on desired texture.
Chill sticky dough or add a bit more flour for easier handling.
Add raisins, dried cranberries, or nutmeg for variations.
Cookies can be baked in muffin tins for a cakier version.
